Our Alligator Gumbo is made fresh in-house using fresh alligator meat, shrimp, and fish as well as vegetables such as green peppers, celery, onion, and okra. We make our gumbo with a traditional roux made from peanut oil and flour. Sassafras filet, or gumbo filet, is used to thicken the crab base and helps it to form a nice, rich sauce.
